Basil Pesto

My basil pesto is fresh, flavoursome and versatile- much more delicious than the ones you buy in supermarkets (if I do say so myself). It can be enjoyed with pasta, as a pizza base, as a dip- you name it! While pine nuts are predominantly used in pesto, I understand they can be expensive. Feel free to use some less expensive nuts (like  cashews) to give a delicious twist on the original recipe.

Preparation Time: 5 mins; Cooking Time: nil ; Makes approx. 1 cup

Ingredients

  • 1 large bunch of basil
  • 2 garlic cloves, medium
  • ½ cup pine nuts (although feel free to use other nuts as a substitute- I used some left over macadamias)
  • ½  cup of extra virgin olive oil
  • 60g of Parmesan cheese, broken up in to little chunks

Method

  1. Place all the ingredients into a food processor or blender and blend until well combined (the pesto will be slightly chunky).
